This week I’m bringing out the big guns. I have no childcare or housework help for three days, which in my world is a prediction of utter chaos. Fortunately I froze lots of meals last week, so that’s what we’re eating. Let’s just call this the “emptying my freezer” edition.
Monday: Vegetarian pasta sauce with fusilli
Tuesday: Falafel, pita, hummus, Israeli salad, bourekas
Wednesday: Moroccan chicken breasts, rice, broccoli
Thursday: Broccoli and Cheddar quiche
Friday: Chicken soup, challah, brisket, sweet potatoes, sugar snap peas
Saturday: Meatballs and rice
Sunday: Potato-leek soup
Well, that was easy! Only one meal requires anything beyond heating stuff up or boiling pasta. Maybe by the end of this week Mr. December will stop complaining that our freezer is too full.
